Laura Pensiero, GIGI TRATTORIA owner, is a graduate of the French Culinary Institute. Laura is also a Registered Dietitian and author, most recently co-authoring THE STRANG CANCER PREVENTION CENTER COOKBOOK (MCGRAW-HILL, 2004). Chef4Life, the consulting company Laura founded and operates, promotes health, longevity and vitality through nutritious, flavorful eating. As Culinary Coordinator at Memorial-Sloan Kettering Prevention and Wellness Center, in New York City, Laura demonstrates delicious and healthful recipes on a weekly basis.

Jesse Frederick is Executive Chef at GIGI TRATTORIA. Jesse grew up in the restaurant business. His family has owned and operated the renowned Guidetti's in Wingdale, NY for 3 generations. From the age of eight, Jesse began mastering restaurant tasks in the family business. By twelve, he was cooking with his father and spending summers traveling and eating in Europe. The Culinary Institute of America (CIA) was his calling after high school. During the CIA externship he worked under Todd English at the celebrated Olives restaurant. Upon graduating, Jesse took a position as grill chef at Miramar in Westport, CT. He was soon promoted to chef de cuisine at this 4 Mobile Star restaurant. In 2002, Jesse joined the Gigi Trattoria kitchen in the sauté position. Now, as executive chef, he creates inspired "Hudson Valley Mediterranean" dishes.

Jesse, Laura and the entire staff participate in the GIGI GARDEN, a source of fresh, organic, seasonal produce used for our menus.

Inquire about the "Chef's Table" in the Cucina Room, which can seat up to 14 diners, or book the room privately for groups up to 30.
